There are so many gluten free chicken recipes out there.
Why not try eating something other than chicken, gluten free, that is encrusted with quinoa or potato or anything else that is naturally gluten free?
A times, pork as been considered a good substitute for chicken. Yes, you need to ensure its tender and cut up into smaller pieces. However its less boring and can easier to cook!
This is a satisfying recipes and different than most that I have tried before.
My household believes you can eat Quinoa with any meal.
Recipe:
Makes approximately 15 pieces
1 pound skinless pork loin, thinly sliced into 1-inch thick strips
½ teaspoon salt
¼ teaspoon fresh ground black pepper
¼ teaspoon ground parsley
2 egg, whisked
1 ½ cups cooked quinoa, recommend using chicken broth instead of water
½ cup gluten free breadcrumb, take any gluten free bread and food process it into crumbs
2 tablespoons olive oil
Spread quinoa and breadcrumbs on a piece of aluminum foil.
In a shallow mixing bowl, place the egg, salt, pepper, and parsley. Stir to combine. Dip the pork into the egg mix and then press into quinoa mixture on all 6 sides of each piece. Place the pork onto a plate.
Warm a large skillet on high heat. Add the oil. When the oil is hot, add the pork in batches and decrease the heat to medium.
Cook each side on approximately 5 minutes, then flip and cook until the crust begins to brown and the pork is not longer translucent in the center. Transfer tenders to a plate and serve hot with veggies.
