We had too many strawberries in the house and the freezer was full! Everyone is the house loves pizza so let's try to make “French pizza.”
The sweet galettes were enjoyed so much that I decided to create savory galettes too! Galette or as Chef Rhys likes to say “Collettes.” Well they are both French names and originally from France !
Recipe for Sweet:
Makes approximately 8-9
Filling:
7 medium strawberries, stemmed and finely chopped
3 very ripe bananas, peeled and mashed
In a medium size bowl, mix all ingredients of filling.
Batter:
1 cup nut butter or flax egg
1 cup tapioca flour
1 1/4 cup teff flour
1 1/2 cup coconut milk
In a medium size bowl, mix all ingredients of batter.
Recipe for Savory:
Makes approximately 8-9
Filling:
8 ounce goat cheese, softened
4 cups fresh spinach or broccoli, finely chopped (recommended using food processor)
Salt and pepper to taste
optional: 1/2 cup bacon (approximately 8 pieces), cooked and finely chopped (recommended using food processor)
In a medium size bowl, mix all ingredients of filling.
Batter:
1 jumbo avocado, pitted, peeled and puréed
2 medium gloves garlic, peeled and minced
1 cup tapioca flour
1 1/4 cup teff flour
1 1/2 cup coconut milk
In a medium size bowl, mix all ingredients of batter.
Preheat oven to 425F and grease a wide baking pan.
Spread 1/4 cup batter on greased pan until it is flattened and about 1/2 inch in height. Fill the middle with 3 Tablespoons of filling and allow it to settle almost like filling a swimming pool, but leave about a 1/4 inch around the border. Continue this for each galette until all batter and filling are used. Depending on the size of your pan, you may only fit approximately 5 at a time on a pan.
Place in oven and bake for 25 minutes. Remove from oven and allow to cool. Enjoy warm.
Prefer mini size galettes?
Only use 1 tablespoon of batter and approximately 1 tablespoon of filling for each!
