Recipe:
Makes about 12 servings
1 medium shallot, peeled and minced (recommend food processing)
3 medium garlic cloves, peeled and minced (recommend food processing)
3 teaspoons ground ginger
2 pounds ground meat of your choice
6 Tablespoons olive oil
Ground pepper to taste
6 ounce macadamia nuts, dry roasted (can be replaced with chestnuts)
2 Tablespoon gluten free soy sauce or coconut aminos
2 Tablespoon rice vinegar
1 cup carrots, de-stemmed, grated (use food processor on chop mode)
1 head butter lettuce, washed and leaves separated
Preheat oven to 250 F.
Place nuts in a single layer on a shallow baking pan and roast in oven for 10 minutes. Remove nuts from oven to cool. When cooled, mince in food processor.
In a large skillet, place oil, meat, garlic, ginger, shallot, and pepper. Cook over medium-high heat until meat is cooked through and no pink is visible. Stir intermittently and crumble meat while cooking to ensure evenly cooked.
Add the nuts, coconut aminos, rice vinegar, and carrots. Stir to combine.
Fill each lettuce leaf with approximately 1/4 cup of meat and enjoy!
