Cinnamon Nut Butter Cookies - gluten free, vegan, low sugar

Crazy ideas are the best ideas! Who doesn’t like nut butter?

Peanut butter was historically the original nut spread. Now we use so many blends of nuts, we just call it Nut Butter! Crazy to think the little peanut that became an American craze after the 1904 St Louis World’s Fair, came from South America.

Recipe:

Makes 22

 

Date purée: 5 Tablespoons Good Karma Flaxmilk or non dairy milk, plus 1/2 cup dried medjool pitted dates

3/4 Jumbo avocado 

1/2 cup nut butter of your choice

1/4 cup brown sugar

1/2 teaspoon vanilla extract

1/2 cup coconut flour

1/2 cup Bob’s Red Mill all purpose gluten free flour

1/4 teaspoon xanthan gum 

1/2 Tablespoon cinnamon 

1/4 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

 

Date puree:

In a mixing bowl, soak dates in milk for at least 10 minutes. Food process until pureed.

 

Preheat oven on 375F. Grease cookie sheets or pan.

Combine date puree, avocado, nut butter, sugar, and vanilla in bowl. Mix until creamy. Add both flours, xanthan gum, cinnamon, baking powder, baking soda and salt. Mix until combine.

Shape dough into 1- 1 1/2 inch balls. Place 2 inches apart onto cookie sheets. Bake 10-11 minutes or until edges are lightly browned.

Remove from oven and allow to cool. Enjoy!
