Yes, when many think of cinnamon buns they think of Cinabon, which is fillled with deliciously unhealthy sugar!
Celebrate October 4: Cinnamon Bun Day in Sweden!
Recipe:
Makes approximately 11-12
Dough:
1/4 cup salted butter or vegan butter
1/4 cup apple sauce* (see recipe below)
1 vegan egg (1 Tbsp flaxseed meal plus 3 Tbsp water lightly combined in a small bowl)
3 Tbsp maple syrup
4 ½ teaspoons active dry yeast
¾ cup Good Karma Flaxmilk or non dairy milk
1 cup Bob’s Red Mill all purpose gluten free baking flour
1/2 cup almond flour
1 cup tapioca flour
1/2 cup coconut flour
1 Tablespoon flaxseed meal
1/2 teaspoon xanthan gum
½ teaspoon salt
2 teaspoons cardamom or cinnamon
Filling:
⅞ cup salted vegan butter, melted but room temperature
1/4 cup apple sauce
3 ¾ tablespoons cinnamon
The Dough: Melt butter on the stovetop, take off the fire and add the milk. Stir to combine Make sure it is room temperature (feels lukewarm to the touch, not hot) before adding the yeast. Add yeast, dissolve and combine gently. Add apple sauce, dissolve and combine gently.
In a large mixing bowl combine the flour, flaxseed meal, xanthan gum, cardamom, and salt. Make a well in the dry mixture and incorporate the liquid by mixing and kneading.
Add 1 egg to the dough and keep kneading for about 5-10 minutes until it has a firm, smooth, non sticky doughy feel. Form into a ball and cover the bowl with a towel and let the dough rest for up to 1 hour.
Time to make the god stuff! The Filling: Combine butter, apple sauce, and cinnamon. Mix well until all elements are combined and you have the consistency of a spread. Set aside until ready to use.
When the dough is ready, roll out to ¼ inch thickness. Spread your cinnamon butter evenly over the whole surface. It will be messy, but brush on and allow it dry and then add more. Repeat this process into all gone.
Roll up the dough into a cylinder, and cut into 2-inch-thick rolls. Place on a greased baking pan and let proof for approximately 1/2 hour.
Brush maple syrup onto your rolls. Bake the buns at 300º for about 35 minutes or until light brown on tops.
Now time for the Glaze:
1 cup powdered sugar
2-4 Tablespoons coconut or goat milk
Stir to combine ingredients.
Drizzle glaze on top of buns and allow to dry. Enjoy warm!
*Apple sauce: Makes approximately 4 cups
4 apples, cut into quarters (peeled or not peeled)
¾ cup water
1 teaspoon ground cinnamon ( grind a stick of cinnamon to create if desired)
Place apples, water, and cinnamon in a stovetop pot. Cover and cook on medium heat for 15-20 minutes.
Allow apples to cool. Remove from pot and mash with fork.
