Sous Chef Rhys loves his Tex Mex style beans. Instead of wasting money at a restaurant I had to invent my own bean recipe, which I was fortunately successful at doing last night! I had tried making them in the oven and they were a disaster.
This time Rhys loves them.
Even his picky eater friend loves them too!
The trick: PRESSURE COOKER !
Recipe:
Makes approximately 10 servings
1 Tablespoon safflower oil
1 yellow onion, peeled and minced (recommend using the food processor)
1 cup fresh oregano, minced (recommend using the food processor)
1 teaspoon cumin
2 cups dried black beans, soaked in at least 2 cups water
4 cups room temperature water
1 teaspoon salt
optional: 1 cup carrots, shredded (recommend using food processor)
Place beans and 2 cups of water in a bowl and allow to soak for at least an hour.
Place pressure cooker at Saute mode and wait until it says HOT. Add oil, salt, oregano, cumin and onion. Lock and cook until softened and wait until cooker says OFF. Open and add beans, water, and carrots if using, to pressure cooker. Lock and place pressure cooker at Pressure Cook for 20 minutes. After the 20 minutes, keep it locked and allow to cool for at least 20 minutes so the pressure can release automatically.
Remove beans from cooker and allow to cool to room temperature.
Enjoy a la carte, a side dish with quinoa or rice at a BBQ, or with gluten free tacos!
